Hará bhara kebab is a healthy starter / snack since it is loaded with fresh greens like spinach, coriander, mint and peas apart from mashed potato. The potato and corn flour serves as a binding agent. This can be deep fried, pan fried or shallow fried depending on your preference. indulge in this tasty and healthy snack along with masala chai /filter coffee on a cold winder evening.
Ingredients:
Potato – 2 medium size
Spinach – 2 handful
Coriander – handful
Mint – handful
Frozen Peas – 1/2 cup
Green chilli – 3
Ginger – small piece
Jeera – 1 tsp
Turmeric – 1 tsp
Kashmiri chilli powder – 1/2 tsp (optional)
Corn flour – 3 tsp
Breadcrumbs – 1/2 cup (optional)
Oil – 2 tbsp
Salt-to taste
Boil the potatoes and peel the skin. Mash the potatoes and keep it aside. In a pan, add 2 tsp oil, add jeera, chopped ginger and chopped green chillies. Add chopped spinach, coriander, mint leaves and peas. Cook for few minutes. Add turmeric powder and chilli powder. Cook till all the greens wilt. Cool and grind this to a paste. Transfer this to a bowl. To this add mashed potatoes and salt. Take a small portion of this and make a small ball and flatten it using both hands. Sprinkle some bread crumbs onto the top and bottom of the kebabs (optional). In a flat pan, place the round flattened kebabs and spray oil on top, sides and bottom. Cook until it is light golden brown. Serve this with ketchup or mint chutney.
Variations: Deep fry the kebabs to get a crispier version.
Along with the greens, add chopped green pepper.
